Modeled after the famed "21" Club's Prohibition Room, the Capital Wine cellar is the resting space for the hotel's legendary wine collection. The space also serves as a coveted dining venue for small, select groups.
Evenings typically begin with cocktails or Champagne with hors deouvres, followed by a dinner of at least seven courses with appropriate wine pairings. Each menu is custom-designed based upon the preferences of the host as well as the availability of the freshest available ingredients. The wines are individually selected for compatibility to the cuisine, but may be built around a particularly rare bottle or the hosts' preferred regions.
